My first post
There always seems to be a case wherein one journals their random thoughts. Today I had an idea to create a website with a space theme and put a recipe for cupcakes in it… well here you go. My first post. Peanut butter cupcakes:
Peanut butter chocolate cupcakes
A dozen. Soft peanut butter cake, chocolate frosting. About forty minutes, most of it waiting.
Cake
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon fine salt
- ½ cup creamy peanut butter
- ⅓ cup unsalted butter, softened
- ¾ cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla
- ½ cup buttermilk
Heat the oven to 350°F (175°C). Line a 12-cup tin.
Whisk the flour, baking powder, baking soda, and salt. In another bowl beat the peanut butter, butter, and brown sugar until it looks light. Beat in the eggs one at a time, then the vanilla. Add the dry mix in two parts, alternating with the buttermilk. Don’t overmix.
Fill the cups about two-thirds. Bake 16–18 minutes, until a toothpick comes out clean. Cool in the tin five minutes, then on a rack.
Frosting
- ½ cup unsalted butter, softened
- ⅓ cup cocoa powder
- 1½ cups powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla
- pinch of salt
- a handful of chopped peanuts, if you want
Beat the butter. Sift in the cocoa and sugar. Add milk, vanilla, and salt and beat until smooth. Spread it on the cooled cakes. Peanuts on top, optional, recommended.
Eat one in the dark. Save the rest for later, or don’t.
